Flour Tortillas

Dakota likes these so much he refuses to eat store-bought tortillas.

4 cups flour
1 1/2 cups warm water
1/2 package yeast (1 1/8 tsp)
1/4 cup oil
1/2-1 tsp salt

Mix yeast in warm water. Mix flour and salt together in large mixing bowl (I use my Kitchen-Aid). Add oil to flour mixture and mix. Add water mixture. Mix, and knead (use the dough hook) until soft dough forms. Divide dough into about 16 pieces (I turn the dough onto my floured surface and cut it with a big knife). Shape each piece into a ball and set aside. Starting with the first ball you shaped, slightly flatten ball with your hands, and then roll out on floured surface. Cook on a very hot skillet (I use a large cast-iron skillet) until bubbles form. Flip. Cook other side, remove from skillet, and cook next tortilla.

Several of you have asked for this recipe. If you don't understand the directions, just leave a comment and I will try to clarify... my mother-in-law rarely gives me directions to recipes (she lists the ingredients and says "you know what to do..."), so I had to write them myself. I think she also mixes them by hand instead of using the Kitchen Aid.

Saucy Ribs

This is half the original recipe (which was plenty for our little family).


Saucy Ribs

2 lbs Boneless Pork Ribs (I used 4 ribs, cut into fourths)

1 cup ketchup

1/2 cup brown sugar

1/2 cup chopped onion

2 dashes Tabasco (I didn’t add this)

1 TB prepared mustard

1 TB worcestershire sauce


Place meat in dish (I used a 9x9). Mix other ingredients together for sauce and pour over meat. Bake at 350* covered for 2 hours. Uncover and bake 1 more hour.

Poppy Seed Dressing

1 1/2 cups red wine vinegar
1 cup oil
1 1/2 cups sugar
1 Tablespoon salt
1 1/2 teaspoons dry mustard
2 Tablespoons poppy seeds
1 large purple onion, chopped

Whole Wheat Bread

One Hour Wheat Bread

I have some friends that use the quick-rise method for making bread. I kept forgetting to get their recipes, so I searched the internet and found this one. It's faster than my 1/2 white, 1/2 wheat recipe, less crumbly, and the entire family loved it. It's my new favorite.

One Hour Wheat Bread

Makes 2 (8x4 inch) loaves

3 c. whole wheat flour
1/3 c. gluten flour, sifted (or vital wheat gluten)
1 1/4 T. yeast
2 1/2 c. very warm tap water
1 T. salt
1/3 c. oil
1/3 c. honey or 1/2 c. sugar
1 1/4 T. bottled lemon juice
2 - 2 1/2 c. whole wheat flour

Mix together first three ingredients in mixer with a dough hook. Add water all at once and mix for 1 minute; cover and let rest for 10 minutes. Add salt, oil, honey or sugar and lemon juice and beat for 1 minute. Add last flour, 1 cup at a time, beating between each cup. Beat for about 6-10 minutes until dough pulls away from sides of the bowl. This makes a very soft dough.

Preheat oven for 1 minute to lukewarm and turn off. Turn dough onto oiled counter top; divide, shape into loaves, place in oiled bread pans. Let rise in warm oven for 10-15 minutes until dough reaches top of pan. Do not remove bread from oven; turn oven to 350 degrees F and bake for 30 minutes (that is 30 minutes from the time you turn the oven on). Remove from pans and cool on racks.
