Spanish Rice

2 TB oil
1 cup uncooked rice
1/2 onion, chopped
1 green bell pepper
2 cups chicken broth
1 can diced tomatoes
1 tsp chili powder, or to taste

Heat oil and saute rice, onion, & pepper until rice is browned & onion is tender.

Stir in water, tomatoes, and chili powder. Bring to a boil, reduce heat, cover, and simmer for 30 minutes.

Hawaiian Haystacks

1 can cream of chicken soup
1/2 cup chicken broth
1 cup chicken
2 cups cooked rice

Toppings:
Chow mein noodles
tomatoes
green pepper
green onion
pineapple
grated cheddar cheese
slivered almonds
coconut
celery
mandarin oranges
water chestnuts

Combine soup and broth in saucepan. Add chicken. Simmer.

Layer ingredients starting with the rice, then chicken sauce, and then whatever toppings you want.

Pork Chop Casserole

1 TB oil
3 boneless pork chops
1 can cream of mushroom soup
3/4 can milk
4 potatoes, thinly sliced
1/2 cup chopped onion
seasonings (ie Mrs Dash, garlic, seasoned salt, pepper...)

Preheat oven to 400 degrees.
Heat oil in skillet, season pork chops, and sear in oil.
Place potatoes and onions in baking dish and season as desired.
Put browned pork chops on top.
Mix cream of mushroom soup and milk and pour over pork chops and potatoes.
Cover with foil and bake about 45 minutes.

I served this with green beans, but I think I'll put them in the casserole next time.
