Whole Wheat Bread
This is the same recipe I've been using for years, but makes four loaves instead of two. (The family likes this so much, and it's so easy that we've only bought bread once or twice since I bought my new mixer a year ago). It freezes well. I also use the dough to make fry bread for Navajo Tacos.
6 cups (900 g) whole wheat flour
2/3 cup (108 g) vital wheat gluten
2 1/2 TB (22 g) yeast
5 cups very warm tap water
2 TB salt
2/3 cup oil
2/3 cup honey
2 1/2 TB lemon juice
4-5 cups (~700 g) whole wheat flour
Mix together first three ingredients in mixer with dough hook.
Add water all at once and mix for 1 minute.
Cover and let rest for 10 minutes.
Add salt, oil, honey, and lemon juice and beat for 1 minute.
Add last flour, 1 cup at a time, beating between each cup.
Beat (knead) for about 6-10 minutes until dough pulls away from sides of the bowl. This make a soft dough.
Preheat oven for 1 minute to lukewarm and turn off. Turn dough onto oiled counter top. Dived, shape into 4 loaves, and place in oiled bread pans. Let rise in warm oven for 10-15 minutes until dough reaches top of pan. Do not remove bread from oven. Turn oven to 350 and bake 30 minutes (30 minutes from the time you turn the oven on). Remove from pans and cool on racks. (for soft tops, lightly spray them with water, oil, or butter)

Banana Bread
This is the recipe my mom uses in her bakery (scaled down to make 4 large loaves instead of 16).
Preheat oven to 350.
Cream together:
1 1/2 cups butter
3 cups sugar
7 bananas (peeled)
Add:
1 TB vanilla
1/2 cup milk
3/4 cup applesauce
6 eggs
Mix in:
6 cups white flour
1 TB baking soda
1/2 TB salt
Bake large loaves for 1 hour, small loaves for 35 minutes. (For convection oven heat to 325, bake large loaves for 45 minutes, small for 30 minutes). Makes 4 large loaves.

Crepes

Double Recipe:
Combine until smooth:
2 cups flour
2 cups milk
1 cup lukewarm water
8 large eggs
1/2 cup butter, melted
1 tsp salt
Cover with plastic wrap and let stand for 30 minutes, or refrigerate for up to 2 days. Use about 1/4 cup batter for each crepe.
Double Recipe:

Waffles

Preheat waffle iron.
In a large bowl, mix together dry ingredients:
1 3/4 cups flour
1 TB baking powder
1/2 tsp salt
In another bowl, mix wet ingredients:
3 eggs
1/2 cup butter, melted
1 1/2 cups milk
Make well in center of dry ingredients and pour in the wet ingredients. Combine. Cook in hot waffle iron.

Wheat-Oat Pancake Mix

My kids love these pancakes! They eat them faster than I can make them. If I don't start before he gets out of bed, the 15 minute wait is torture for my 5-year-old.
3 1/2 cups Old Fashioned oats, blended smooth
4 cups whole wheat flour
1 cup all purpose flour
3 tablespoons sugar
3 tablespoons baking powder
1 tablespoons salt
1 tablespoon baking soda
3/4 cup vegetable oil
To make the mix: Combine oats, wheat flour, all purpose flour, sugar, baking powder, salt and baking soda in a large mixing bowl. Mix on low speed and drizzle the oil in while the mixer is running. When all the oil has been added, stop the mixer and squeeze a clump of the mixture in your hand; if it holds together it's just right. If it won't hold together, stir in one tablespoon of oil at a time, until it does. Store indefinitely in an airtight container in the freezer.
To make the pancakes:

1 cup buttermilk (or 1/2 cup plain yogurt and 1/2 cup milk)
1 large egg

Pumpkin Muffins

1 tsp soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
2 eggs
1/3 cup buttermilk
1/3 cup applesauce
1 TB molasses
1/2 tsp vanilla
1/2 cup brown sugar
1/2 cup sugar
1 cup pumpkin
nuts or chocolate chips (optional)
Preheat oven to 350. Grease muffin pans. Mix dry ingredients flour, soda, powder, salt, cinnamon, nutmeg, and ginger together. Beat eggs, buttermilk, applesauce, molasses, vanilla, sugars, and pumpkin together. Add dry ingredients to wet ingredients and stir until just moistened. Fold in nuts or chocolate chips. Spoon into muffin pan, and bake for 20-25 minutes.

Banana Muffins
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
4 bananas, mashed
3/4 cup sugar (I may use less next time)
1 egg
1/3 cup applesauce
1 tsp vanilla
Mix flour, baking powder, soda, salt, and cinnamon together. Combine bananas, sugar, egg, applesauce, and vanilla. Fold flour mixture into banana mixture, just until moistened. Bake at 350 for 25-30 minutes.

Flour Tortillas

Dakota likes these so much he refuses to eat store-bought tortillas.
4 cups flour
1 1/2 cups warm water
1/2 package yeast (1 1/8 tsp)
1/4 cup oil
1/2-1 tsp salt
Mix yeast in warm water. Mix flour and salt together in large mixing bowl (I use my Kitchen-Aid). Add oil to flour mixture and mix. Add water mixture. Mix, and knead (use the dough hook) until soft dough forms. Divide dough into about 16 pieces (I turn the dough onto my floured surface and cut it with a big knife). Shape each piece into a ball and set aside. Starting with the first ball you shaped, slightly flatten ball with your hands, and then roll out on floured surface. Cook on a very hot skillet (I use a large cast-iron skillet) until bubbles form. Flip. Cook other side, remove from skillet, and cook next tortilla.
Several of you have asked for this recipe. If you don't understand the directions, just leave a comment and I will try to clarify... my mother-in-law rarely gives me directions to recipes (she lists the ingredients and says "you know what to do..."), so I had to write them myself. I think she also mixes them by hand instead of using the Kitchen Aid.

One Hour Wheat Bread
I have some friends that use the quick-rise method for making bread. I kept forgetting to get their recipes, so I searched the internet and found this one. It's faster than my 1/2 white, 1/2 wheat recipe, less crumbly, and the entire family loved it. It's my new favorite.

3 c. whole wheat flour
1/3 c. gluten flour, sifted (or vital wheat gluten)
1 1/4 T. yeast

1/3 c. honey or 1/2 c. sugar
1 1/4 T. bottled lemon juice
2 - 2 1/2 c. whole wheat flour

Add salt, oil, honey or sugar and lemon juice and beat for 1 minute. Add last flour, 1 cup at a time, beating between each cup. Sunday Rolls
Sunday Rolls
2 TB yeast
1 ¼ cup water
½ cup shortening (or butter or margarine)
½ cup sugar
3 eggs, beaten
4 ½ cups flour
2 tsp salt
Soften yeast in water. Add shortening, sugar, and beaten eggs. Mix well. Add salt and flour and knead to make a soft dough. Let rise until double. At this point you have several options:

- Form the rolls, put them in the fridge, then take them out, and let them warm and rise, then cook them

Baking Powder Biscuits
Baking Powder Biscuits
2 cups flour
1 TB sugar
1 TB baking powder
1 tsp salt
½ cup shortening
¾ cup milk
Heat oven to 450*
Mix flour, sugar, baking powder & salt. Cut in shortening. Stir in milk.
Knead lightly 10 times.
Roll out ½ inch thick. Cut with round cutter.
Bake on ungreased cookie sheet for 10-12 minutes or until golden brown.
These make great cheese biscuits... just add grated cheese to the dough.
