Sausage Macaroni Bake

Nothing spectacular, but good, easy, and fast (especially when using previously chopped and frozen onion and pepper).

Sausage Macaroni Bake

1 ½ cups uncooked elbow macaroni
¾ pound bulk Italian sausage
1 small onion chopped
¼ cup chopped green pepper
1 (8oz) can tomato sauce
1 cup shredded mozzarella cheese
½ cup grated parmesan cheese (divided)
2 TB fresh parsley
1 clove garlic, minced
½ tsp dried oregano
¼ tsp salt
¼ tsp basil
¼ tsp pepper

Cook macaroni according to package directions. Meanwhile, in large skillet, cook the sausage, onion, and green pepper over medium heat until meat mixture is no longer pink; drain. Drain macaroni. Combine macaroni, sausage mixture, tomato sauce, mozzarella cheese, ¼ cup parmesan cheese, parsley, garlic, oregano, salt, basil, and pepper. Transfer to a greased 2 qt baking dish. Sprinkle with remaining parmesan cheese. Bake, uncovered at 350* for 20-25 minutes or until heated through.
