Red Enchilada Sauce

I used this recipe to use up some leftover pork roast that was way too dry for anything else. Adam wasn't a fan of the original pork roast, but requested the enchiladas again. I just shredded the pork, added some of this sauce (and maybe some cheese), wrapped in tortillas, placed in pan, topped with remaining sauce and shredded cheese, and baked. Yum!
